Chef Jonathan Zaragoza Brings Salsa 101, Global Flavors to Area Students

BROOKS COUNTY - Recently, students at Falfurrias and Premont High Schools got a taste of celebrity cuisine in February as Chef Jonathan Zaragoza visited both campuses for cooking demonstrations and a special lunch.

The events, held in partnership with Chartwells K12, featured live assemblies where students watched Zaragoza prepare fresh salsa using a traditional molcajete as part of his “Salsa 101 Series.” Students had the opportunity to ask questions, sample the salsa and take photos with the chef.

During the assemblies, Zaragoza shared his culinary background and participated in an interactive question-and-answer session. The visit concluded with a special lunch service highlighting global flavors.

The demonstrations aligned with Chartwells K12’s focus on combining nutritious meals with culinary education. The company serves 2.3 million meals daily to more than 4,800 schools nationwide.

The cafeteria is often one of the first places students experience foods outside their family traditions. To expand those experiences, Chartwells K12 recently launched “Global Eats,” a program designed to introduce K-12 students to international cuisines.

The program began with culinary explorations of China, India, Italy and Mexico, featuring authentic recipes developed by Chartwells chefs and dietitians with input from students. The initiative aimed to turn school meals into a cultural learning experience, encouraging students to try new foods while learning about global traditions.

By incorporating unique ingredients and traditional cooking methods into school menus, Chartwells officials said they hoped to keep lunchtime exciting and reflective of diverse cultural heritages.
